Christmas Candy 2012

For the past five days I have worked with Dad on the Christmas candy. I don't have any pictures of the process this year but I can give you a breakdown of the materials we used.

20 lbs white sugar
 6 lbs brown sugar
 2 lbs butter
 5 cans sweetened condensed milk
 3 qts heavy cream
 2 qts half and half

 2 lbs pecans
 1 lb pecan meal
1 1/2 lb walnuts
 1 lb black walnuts
1/2 lb hazelnuts
 1 lb almonds
1/2 bag coconut
1 1/2 lb pistachios

3 1/2 lbs white chocolate
6 lbs milk chocolate
6 lbs dark chocolate

We turned these ingredients into:

7 batches of fondant flavored with orange, cherry, mint, maple walnut, vanilla and pistachio
2 batches of fudge
3 batches of caramels, some with black walnuts, some with pecans and some plain
120 turtles
Lots of sugared and chocolate coated nuts

These were packaged into

20 large boxes
14 medium boxes
 6 small boxes

and

4 boxes dedicated to holding turtles, with a dozen in each one.

That is a lot of candy!!!

All this goodness is packaged and ready to be taken to Grandma's house where the family can pick up their treat from her as they wish her a Merry Christmas!
